Bikini

Serves 10 people

For the Citrus Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

Ingredients for the Drink (makes 850ml, to serve 10)

400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

Making the Syrup: Place the listed ingredients into a saucepan, heat until it reaches a simmer, stirring so the sugar melts. Next, turn off the stove allowing it to reach room temperature entirely. Pour into an sterilised bottle, cap it and refrigerate it in the fridge, it can be stored for up to four weeks.

For the Batch Mix: Mix all the spirits and syrup into a sizeable container, allow it to infuse for one hour, then filter it , ideally through muslin, so it's fully clarified.

When ready to serve: Measure 85ml of the premix to a stirring glass containing ice, and agitate carefully for one minute to chill. Pour into a cold coupe glass or similar, decorate with some cranberries and complete it by giving it a brief mist with the mandarin essence over the top.
